Ingredients
  

For the crust

  • 1 cup graham cracker crumbs For the base
  • 2 tbsp sugar For sweetness
  • 3 tbsp butter, melted To bind the crust

For the cheesecake filling

  • 16 oz cream cheese, softened Ensure it’s at room temperature
  • 1/2 cup sugar For sweetness
  • 1.5 tbsp all-purpose flour To stabilize the filling
  • 1/2 tsp vanilla extract For flavoring
  • 1/4 cup sour cream For creaminess
  • 1/4 cup heavy cream For whipping into the filling
  • 8 drops green food coloring gel For the Grinchy color

For the topping

  • 1/2 cup heavy cream For whipping
  • 2 tbsp powdered sugar For sweetening whipped cream
  • 12 pieces strawberries Fresh for topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Prepare the muffin tin by lining it with paper liners.

Making the crust

  • Mix graham cracker crumbs, melted butter, and sugar in a small bowl.
  • Divide the mixture among the muffin cups, and press down firmly to form a crust.
  • Bake the crusts for 5 minutes, then set aside to cool.

Making the cheesecake filling

  • In a large bowl, combine softened cream cheese and 1/2 cup sugar. Beat until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Incorporate the vanilla extract, sour cream, and heavy cream into the mixture.
  • Add green food coloring gel and mix until desired color is achieved.

Baking the cheesecakes

  • Pour the cream mixture over the baked crusts, filling each cup nearly to the top.
  • Bake for 15-20 minutes until the centers are set but still jiggle slightly.
  • Cool in the tin until room temperature, then refrigerate for at least 12 hours.

Preparing the topping

  • Beat heavy cream with powdered sugar until stiff peaks form.
  • Prepare strawberries by cutting off their flat ends.

Assembly

  • Top each chilled mini cheesecake with whipped cream and a strawberry.
  • Add a small pom-pom of whipped cream on top of each strawberry for decoration.

Notes
