Ingredients
  

For the Cookie Dough

  • 1 cup unsalted butter, softened Use perfectly softened butter for a light texture.
  • 3/4 cup white sugar
  • 3/4 cup light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon strawberry extract For added flavor.
  • 15 drops red or pink liquid food coloring Adjust for desired color.
  • 2 2/3 cups all-purpose flour
  • 1 teaspoon baking soda Helps cookies rise.
  • 1/2 teaspoon salt

For the Crunchy Topping

  • 20 pieces Golden Oreos, roughly crushed
  • 1 box (3.4 oz) strawberry Jello powder
  • 4 tablespoons butter, melted

Instructions
 

Preparation

  • Roughly crush the Golden Oreos in a bowl using a rolling pin or your hands.
  • Mix in the strawberry Jello powder and melted butter into the crushed Oreos and stir until well combined.
  • Spread the Oreo mixture onto a plate in a single layer for later use.
  • Preheat your oven to 350°F (175°C).

Cookie Dough

  • In a large mixing bowl or stand mixer, cream together softened butter, white sugar, and light brown sugar until light and fluffy.
  • Add eggs one at a time, incorporating each fully before adding the next.
  • Pour in the strawberry extract and mix well.
  • Whisk in food coloring until you reach desired pink color.
  • In a separate bowl, whisk together flour, baking soda, and salt.
  • Gradually add the flour mixture to the sugar and butter blend while mixing on low.
  • Scoop a tablespoon of dough into your hands and roll into a round ball.
  • Roll each ball in the crushed Oreo mixture until fully coated.
  • Place cookies on a baking sheet lined with parchment paper, spacing them out.
  • Bake for about 8 minutes.
  • Once slightly golden, sprinkle additional crushed Oreos on top and return to the oven for another 4 minutes.
  • Remove from the oven and let cool completely on a wire rack.
