Ingredients
  

Crust

  • 1 cup crushed graham crackers
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted

Cheesecake Filling

  • 1 package (8 ounces) cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup strawberries, chopped
  • 1/4 cup strawberry preserves

Topping

  • 1/2 cup crushed freeze-dried strawberries For topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  • In a bowl, mix crushed graham crackers, granulated sugar, and melted butter until well combined. Press firmly into the bottom of the prepared baking dish to form a crust.
  • Bake the crust for 10 minutes. Remove from oven and allow to cool completely.

Cheesecake Filling Preparation

  • In another bowl, beat the softened cream cheese until creamy. Add in powdered sugar and vanilla extract, mixing until smooth.
  • In a separate bowl, whip the heavy cream until stiff peaks form. Fold into the cream cheese mixture until well combined.
  • Gently fold in the chopped strawberries and strawberry preserves, creating a marbled effect.

Assembly

  • Spread the cheesecake mixture evenly over the cooled crust, smoothing the top with a spatula.
  • Sprinkle crushed freeze-dried strawberries over the cheesecake layer, pressing slightly to adhere.
  • Cover with plastic wrap and refrigerate for at least 4 hours or until set.
  • Once set, use the parchment to lift the bites out and cut into squares or bars to serve.
