Ingredients
  

Crust Ingredients

  • 1 cup crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1/4 cup granulated sugar

Cheesecake Filling Ingredients

  • 8 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, diced
  • 1 cup whipped cream
  • Additional as needed crushed graham crackers for topping

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a bowl, mix together the crushed graham crackers, melted butter, and granulated sugar to form a crumbly mixture.
  • Press half of this mixture firmly into the bottom of a lined baking dish to create a crust.
  • In another bowl, beat the softened cream cheese until smooth. Gradually add in the powdered sugar and vanilla extract, mixing until well combined.
  • Fold in the diced strawberries gently, followed by half of the whipped cream.
  • Spread the cheesecake mixture over the crust in the baking dish.
  • Sprinkle the remaining crumb mixture on top of the cheesecake layer for added crunch.
  • Place the dish in the oven and bake for about 20-25 minutes, or until set.
  • Remove from the oven and let cool completely in the refrigerator for at least 2 hours.
  • Once chilled, cut into bite-sized pieces and serve.
