  • 1 cup chopped fresh strawberries Use fresh for best flavor.
  • 8 oz cream cheese, softened Soften completely for easy mixing.
  • 1/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Can substitute with whole wheat flour.
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted

Streusel Topping

  • 1/2 cup brown sugar
  • 1/2 cup rolled oats
  • 1 teaspoon ground cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease it lightly.
  • In a mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy.
  • Add the egg and vanilla extract, mixing until fully incorporated. Set this cream cheese mixture aside.
  • In another bowl, combine the flour, baking powder, baking soda, and salt; whisk them together.
  • Gradually pour the melted butter into the dry mixture, stirring until just combined. Be careful not to overmix.
  • Gently fold in the chopped strawberries until evenly distributed throughout the batter.

Assembly

  • Spoon half of the muffin batter into the prepared muffin tin, filling each cup about halfway.
  • Place a tablespoon of the cream cheese mixture atop the batter in each muffin cup.
  • Top each with the remaining batter, filling the cups slightly more than three-quarters full.
  • In a separate bowl, mix the brown sugar, rolled oats, melted butter, and ground cinnamon to create the streusel topping. Crumble this mixture over the muffins.

Baking

  • Bake for 20 to 25 minutes or until a toothpick inserted into the center comes out clean.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack to cool completely.

Notes

For extra flavor, consider adding a pinch of lemon or orange zest to the batter. Serve warm or at room temperature. They can be drizzled with honey or served with whipped cream.
