Preparation

  • Wash the strawberries thoroughly, remove the green tops, and slice them in half. Set aside a few strawberry halves for garnish.
  • In a blender or food processor, combine the cottage cheese, honey or maple syrup, vanilla extract, lemon juice, and a pinch of salt. Blend until smooth and creamy.
  • Add the halved strawberries to the blender. Pulse a few times to mix them in, keeping some chunks for texture.
  • Transfer the mixture into a freezer-safe container and smooth the top.
  • Cover the container and place it in the freezer.
  • Let it freeze for at least 4-6 hours, or until firm and scoopable.

Serving

  • Allow the ice cream to soften for a few minutes at room temperature before scooping. Enjoy with fresh strawberry halves on top.
