  • 1/3 cup honey or agave syrup Adjust for sweetness to taste
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice
  • 1 pinch salt

Instructions
 

Preparation

  • Rinse the strawberries under cold water, hull them, and cut them in half. Mash some strawberries with a fork for a smoother ice cream, or leave them whole for a chunkier texture.
  • In a blender or food processor, combine the cottage cheese, honey or agave syrup, vanilla extract, lemon juice, and salt. Blend until smooth and creamy.
  • Add the prepared strawberries to the mixture and pulse a few times to mix in, retaining some pieces for texture.
  • Pour the mixture into an airtight container or freezer-safe bowl, smoothing the top with a spatula.

Freezing

  • Place the container in the freezer for about 4-6 hours, or until firm. For a softer consistency, freeze for a shorter time.

Serving

  • When ready to serve, let the ice cream sit at room temperature for about 5 minutes to ease scooping.
