Ingredients
  

Taco Shells

  • 6 small small flour tortillas
  • ½ cup granulated sugar
  • 1 tablespoon ground cinnamon
  • ½ cup unsalted butter, melted

Cheesecake Filling

  • 8 ounces cream cheese, softened Make sure it's at room temperature.
  • ½ cup powdered sugar
  • 1 teaspoon vanilla extract
  • ½ cup heavy whipping cream

Strawberry Topping

  • 1 cup fresh or frozen strawberries, chopped
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

Instructions
 

Make the Shells

  • Preheat your oven to 375°F (190°C). In a small bowl, mix the granulated sugar and ground cinnamon until combined.
  • Brush each flour tortilla with melted butter, ensuring an even coating.
  • Coat the buttered tortillas with the cinnamon-sugar mixture, making sure they are well covered.
  • Drape each tortilla over an oven rack to shape the taco shells.
  • Bake for about 8 to 10 minutes, or until they are golden and crunchy. Allow them to cool completely.

Make the Cheesecake Filling

  • In a mixing bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • In a separate bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture to create a lighter filling. Transfer to a piping bag if desired.

Make the Strawberry Sauce

  • In a medium saucepan over medium heat, combine the chopped strawberries, granulated sugar, and lemon juice.
  • Stir gently and let simmer until the strawberries become sauce-like, about 5 minutes.
  • Add the cornstarch slurry and stir continuously until the sauce thickens. Remove from heat and allow to cool completely.

Assemble the Tacos

  • Pipe the cheesecake filling into each taco shell generously.
  • Drizzle or spoon strawberry sauce over the top. Garnish with additional chopped strawberries or powdered sugar if desired.
  • Serve immediately to enjoy the fresh, crunchy texture.
