Ingredients
  

For the Strawberries

  • 1 cup finely chopped strawberries (about 1/2 a 16 oz. container) Use fresh strawberries for best flavor.

For the Brownie Batter

  • 1 cup salted butter, melted Ensure it's hot and melted for mixing.
  • 1/2 cup unsweetened cocoa powder Use high-quality cocoa for better flavor.
  • 2 cups granulated sugar Add sweetness and moisture.
  • 4 large eggs Room temperature for better mixing.
  • 4 teaspoons pure vanilla extract Pure extract enhances flavor.
  • 2 cups unbleached all-purpose flour

For the Cheesecake Layer

  • 8 oz cream cheese, softened Make sure it's at room temperature.
  • 1/3 cup granulated sugar
  • 1 large egg Room temperature.
  • 1 teaspoon pure vanilla extract For the cheesecake layer.

Preparation

  • Preheat your oven to 350°F (175°C) and line a 9×13-inch baking dish with parchment paper, leaving an inch of overhang.
  • In a bowl, combine the finely chopped strawberries with 1 tablespoon of sugar and set aside.
  • In a large mixing bowl, whisk together the melted butter and cocoa powder until smooth, then mix in 2 cups of granulated sugar.
  • Add in the 4 eggs and 4 teaspoons of vanilla extract, whisking until the batter is smooth and glossy.
  • Gradually fold in the 2 cups of flour until fully combined.

Assembly

  • Pour the brownie batter into the prepared baking dish, spreading it evenly.
  • In another bowl, beat the softened cream cheese until smooth, then mix in 1/3 cup sugar, 1 egg, and 1 teaspoon vanilla extract.
  • Dollop cheesecake mixture over the brownie batter, followed by the reserved strawberries.
  • Using a skewer or knife, gently swirl through the brownie batter and cheesecake to create swirls.

Baking

  • Bake in the preheated oven for 45-50 minutes, until the center is set with a slight jiggle.
  • Let the dish cool completely at room temperature, then refrigerate for at least 2 hours before slicing.

Serving

  • Using the overhang, lift the brownies out of the baking dish, place on a cutting board, and slice into 2-inch squares.
  • Serve with whipped cream, extra strawberries, or a drizzle of chocolate sauce.

Notes

For variations, consider using mixed berries or adding nuts. Always check for doneness before removing from the oven.
