Delight in these bite-sized treats that combine the creamy goodness of cheesecake with fresh strawberries, drizzled with chocolate and optionally topped with graham cracker crumbs.

Ingredients
  

Filling

  • 1 package 8 ounces cream cheese, softened
  • 1/3 cup confectioners' sugar
  • 1/4 teaspoon vanilla extract

Strawberries

  • 20 large fresh strawberries (approximately 1-1/2 pounds) Choose ripe strawberries for best flavor.

Chocolate Drizzle

  • 1/4 cup semisweet chocolate chips
  • 1 teaspoon shortening To help the chocolate melt smoothly.

Optional Topping

  • Graham cracker crumbs For added crunch.

Instructions
 

Preparation

  • Start by taking a mixing bowl and adding the softened cream cheese. Beat until smooth and creamy.
  • Gradually add the confectioners' sugar and vanilla extract, mixing until velvety and lump-free.
  • Remove the green stems from the fresh strawberries and hollow them out using a paring knife or melon baller.

Filling

  • Pipe or spoon the cream cheese filling into the hollowed-out strawberries generously.
  • Place the filled strawberries on a baking sheet lined with wax paper.

Chocolate Drizzle

  • In a microwave-safe bowl, combine the chocolate chips and shortening. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  • Drizzle the melted chocolate over each filled strawberry. Optionally, sprinkle graham cracker crumbs on top before the chocolate sets.

Chilling

  • Refrigerate the strawberries until the chocolate is firm, then they are ready to serve.

Notes
