Preparation

  • Preheat your oven to 350°F (175°C). Grease or line an 8x8 inch baking pan with parchment paper.
  • In a large bowl, mash the ripe bananas using a fork until smooth.
  • Add the honey or maple syrup, peanut butter, and vanilla extract to the mashed bananas. Mix until well combined.
  • Stir in the rolled oats, baking powder, and salt. Fold in the chopped strawberries and any optional nuts or seeds.
  • Pour the mixture into the prepared baking pan. Spread it evenly.

Baking

  • Bake in the preheated oven for about 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
  • Remove the pan from the oven and allow the bars to cool completely in the pan.
  • Once cool, lift them out using the parchment paper and cut into squares.
