Ingredients
  

Main Ingredients

  • 1 lb cooked chicken, shredded
  • 6 cups chicken broth Use high-quality broth for best flavor.
  • 2 cups water
  • 2 cups egg noodles Slim or wide noodles can be used.

Vegetables

  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced

Seasonings

  • 1 tsp dried thyme
  • Salt & pepper to taste
  • Fresh parsley for garnish (optional)

Instructions
 

Preparation

  • Heat a splash of oil in a large pot over medium heat.
  • Add the diced onion and minced garlic, sauté for about 2 minutes until fragrant.
  • Add the sliced carrots and chopped celery, sauté for another 3 to 5 minutes until softened.

Cooking

  • Pour in the chicken broth and water, then stir in the dried thyme.
  • Bring the mixture to a boil.
  • Carefully stir in the egg noodles and let them simmer for about 5 to 7 minutes.
  • Add the shredded chicken and heat through for 2 to 3 minutes.
  • Taste and season with salt and pepper.

Serving

  • Ladle the soup into bowls and garnish with fresh parsley if desired.

Notes

Use quality chicken broth for better flavor. Customize your vegetables as desired. This soup can be made ahead, and it tastes even better the next day.
