  • 4 pieces chicken breasts Boneless and skinless
  • 1 cup grated Parmesan cheese For coating
  • 1 cup breadcrumbs Can use gluten-free if desired
  • 2 pieces eggs Beaten for coating
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Olive oil For frying

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a shallow bowl, combine the grated Parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix well.
  • In a separate bowl, beat the eggs.
  • Dip each chicken breast into the beaten eggs, allowing excess to drip off, then coat thoroughly in the Parmesan mixture.

Cooking

  • Heat olive oil in a skillet over medium heat.
  • Add each chicken breast to the skillet and cook for 3-4 minutes on each side until golden brown.
  • Transfer the chicken breasts to a baking dish and bake in the preheated oven for 15-20 minutes or until cooked through (internal temperature 165°F/74°C).

Notes

For an extra crispy crust, double-coat the chicken by dipping in egg and coating with the mixture twice. Experiment with seasonings for more flavor. Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to 3 months.
