Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • Cook the rigatoni in a large pot of salted boiling water until al dente, following package instructions. Drain and set aside.
  • In a large skillet, heat olive oil over medium-high heat. Add the diced steak and brown on all sides, about 5-7 minutes. Remove from the skillet and set aside.
  • In the same skillet, add the diced onion and sauté until translucent, about 3-4 minutes. Then, add the minced garlic and cook for 1 additional minute until fragrant.
  • Reduce the heat to medium-low and pour in the heavy cream, stirring gently. Allow it to simmer for a couple of minutes.
  • Stir in the crumbled blue cheese, dried thyme, salt, and pepper. Mix until the cheese melts and the sauce thickens slightly.
  • Return the steak to the skillet and mix to combine. Add the cooked rigatoni, stirring until the pasta is well coated with the sauce.

Baking

  • Transfer the mixture to a greased baking dish. Sprinkle the top with shredded mozzarella and grated Parmesan cheese.
  • Bake in the preheated oven for 20-25 minutes or until the cheese is bubbly and golden brown.
  • Remove from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley before serving.
