  • 1 pound flank or sirloin steak Choose good quality for best flavor.
  • 2 cups macaroni pasta
  • 2 tablespoons olive oil For cooking the steak.
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup pepper jack cheese, shredded
  • 1 cup sharp cheddar cheese, shredded
  • 2 cups milk
  • 1/4 cup all-purpose flour To thicken the sauce.
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • to garnish Fresh cilantro Optional

Instructions
 

Cooking the Pasta

  • Cook the macaroni according to package instructions until al dente. Drain and set aside.

Cooking the Steak

  • Season the steak with salt, pepper, smoked paprika, and cumin.
  • Heat olive oil in a large skillet over medium-high heat and add the seasoned steak. Cook for about 4-5 minutes for medium-rare, or until desired doneness.
  • Remove the steak from the skillet and let it rest before slicing it into thin strips.

Preparing the Cheese Sauce

  • In the same skillet, add the diced onion and cook until translucent, about 3 minutes.
  • Add the minced garlic and cook for an additional minute until fragrant.
  • Sprinkle the flour over the cooked onions and garlic, stirring well to combine.
  • Gradually whisk in the milk, keeping the mixture smooth as it heats.
  • Continue to cook until the sauce thickens, about 5-7 minutes.
  • Stir in both the pepper jack cheese and cheddar cheese until melted and smooth.

Combining Ingredients

  • Mix the cooked macaroni and sliced steak into the cheese sauce, stirring gently to combine all ingredients evenly.
  • Taste and adjust seasoning with additional salt and pepper if needed.
