Ingredients
  

Salad Ingredients

  • 4 cups spring mix greens Fresh mixed greens.
  • 1 cup cherry tomatoes, halved Add color and sweetness.
  • 1 medium cucumber, diced For crunch.
  • 1 medium bell pepper, diced Can use any color.
  • 1/2 medium red onion, thinly sliced For added flavor.
  • 1 medium avocado, diced Use ripe avocados.
  • 1/2 cup feta cheese, crumbled For richness.
  • 1/2 cup walnuts or pecans, chopped Optional nuts for crunch.

Dressing Ingredients

  • 1/4 cup olive oil For dressing base.
  • 2 tablespoons apple cider vinegar Adds acidity.
  • 1 tablespoon honey or maple syrup For sweetness.
  • to taste Salt and pepper For seasoning.

Instructions
 

Preparation

  • Wash the spring mix greens thoroughly under cold water. Drain and pat them dry.
  • In a large salad bowl, combine the spring mix with cherry tomatoes, cucumber, bell pepper, red onion, and avocado. Toss gently.

Dressing

  • In a small bowl, whisk together the olive oil, apple cider vinegar, honey (or maple syrup), salt, and pepper until well blended.
  • Drizzle the dressing over the salad and toss gently until coated.

Serving

  • Sprinkle crumbled feta cheese and chopped walnuts (or pecans) on top of the salad.
  • Serve immediately, or chill in the refrigerator for up to 30 minutes.

Notes

Store leftovers in an airtight container. Keep dressing separate until ready to serve to avoid wilting.
