Ingredients
  

  • 4 pieces chicken fillets (6 ounces each)
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 4 ounces cream cheese softened
  • 1/2 cup mozzarella cheese shredded
  • 1/3 cup parmesan cheese grated
  • 1/2 cup frozen spinach thawed and drained
  • 1/4 teaspoon garlic powder
  • 1 pinch red pepper flakes optional
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons butter
  • 1/2 medium lemon juiced

Instructions
 

  • Season chicken fillets with kosher salt and black pepper.
  • In a bowl, mix cream cheese, mozzarella, parmesan, spinach, garlic powder, and red pepper flakes until well combined.
  • Using a paring knife, slice a pocket into each chicken breast without cutting all the way through.
  • Stuff each chicken pocket with the creamy spinach mixture.
  • Heat olive oil in a skillet over medium heat. Sear the stuffed chicken for about 6 minutes on one side.
  • Flip the chicken, add butter, and squeeze fresh lemon juice over it. Cook until the internal temperature reaches 165°F.
  • Let the chicken rest for a few minutes before serving.

Notes
