  • 1.5 cups all-purpose flour Can substitute whole wheat flour for higher fiber.
  • 2 tablespoons baking powder
  • 0.5 teaspoon salt
  • 1 tablespoon olive oil Optional for added richness.
  • as needed Sesame seeds or poppy seeds For garnish, optional.

Preparation

  • Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the chopped spinach and cottage cheese until well blended.
  • Add the eggs to the mixture and stir until fully incorporated.
  • In another bowl, mix together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the spinach and cottage cheese mixture, stirring until a dough forms.
  • If using olive oil, knead it into your dough for added richness and moisture.
  • Divide the dough into equal pieces and shape each piece into a flat bagel shape.
  • Place the shaped dough on the prepared baking sheet and sprinkle with sesame or poppy seeds if desired.
  • Bake in the preheated oven for 20 – 25 minutes, or until golden brown on top.
  • Allow the bagels to cool for a few minutes before serving.

Notes
