Spinach and Feta Pinwheels

Delicious and easy-to-make spinach and feta pinwheels, perfect for parties or as a light meal. These bite-sized snacks combine the earthy flavor of spinach with creamy feta cheese wrapped in flaky pastry.

Ingredients
  

For the filling

  • 1 cup fresh spinach, chopped Make sure to dry thoroughly after washing.
  • 1 cup feta cheese, crumbled Use high-quality feta for best flavor.
  • 1/2 cup cream cheese, softened
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • optional chopped herbs (dill or parsley) Add for extra flavor.

For the pastry

  • 1 package puff pastry sheets, thawed Roll out to 1/8 inch thick.
  • 1 egg beaten For egg wash.

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C).
  • In a bowl, combine chopped spinach, crumbled feta cheese, softened cream cheese, minced garlic, and black pepper. Mix well and add chopped herbs if desired.
  • Roll out the thawed puff pastry sheets on a lightly floured surface to about 1/8 inch thick.
  • Spread the spinach and feta mixture over the puff pastry, leaving a small border around the edges.
  • Roll the pastry tightly from one long side to the other, forming a log.
  • Slice the rolled pastry into 1-inch thick pinwheels and arrange them on a baking sheet lined with parchment paper.
  • Brush the tops of the pinwheels with the beaten egg to achieve a golden finish.

Baking

  • Bake in the preheated oven for 20-25 minutes or until golden brown and puffed.
  • Remove from oven and allow to cool slightly before serving.

Notes

These pinwheels can be served warm or cold, and pair well with various dips like yogurt or zesty herb dips. They can be prepped ahead and frozen before baking.
