  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 jalapeños, diced
  • 1 teaspoon cayenne pepper
  • 1 teaspoon ground cumin
  • 2 cans white beans, drained and rinsed
  • 4 cups chicken broth
  • 1 cup pepper jack cheese, shredded
  • to taste Salt and pepper
  • Fresh cilantro for garnish

Preparation

  • Heat the olive oil in a large pot over medium heat for about 1 minute.
  • Add the diced onion and minced garlic, stirring occasionally until they are soft and fragrant, about 3-5 minutes.
  • Incorporate the diced jalapeños, cayenne pepper, and ground cumin, cooking for another 2 minutes.
  • Add the boneless chicken breasts, drained white beans, and chicken broth to the pot, stirring to ensure the chicken is submerged.
  • Increase the heat to high to bring the mixture to a gentle boil, then reduce heat to low and let it simmer for 20-25 minutes.
  • Remove the chicken breasts from the pot, shred them using two forks, and return the shredded chicken back into the pot.
  • Stir in the shredded pepper jack cheese until it melts completely and the chili turns creamy.
  • Season with salt and pepper to taste, then let the chili rest for a couple of minutes before serving.
  • Serve in bowls and garnish with fresh cilantro.

Notes

This chili can be served with tortilla chips, over rice, or in bread bowls. For a vegetarian option, substitute chicken with vegetables and use vegetable broth.
