Ingredients
  

Main Ingredients

  • 1 lb Chicken breast, sliced thinly
  • 1 tablespoon Szechuan peppercorns, crushed
  • 4 cloves Garlic, minced
  • 1 inch piece Ginger, minced
  • 1 large Onion, sliced
  • 1 Green bell pepper, sliced
  • 1 Red bell pepper, sliced
  • 3 tablespoons Soy sauce
  • 2 tablespoons Chili oil
  • 1 tablespoon Cornstarch For marinating chicken
  • to taste Salt
  • as needed Vegetable oil, for frying
  • as needed Scallions, for garnish

Instructions
 

Preparation

  • Slice the chicken breast into thin strips. Optionally, marinate with soy sauce and cornstarch for 15 minutes.

Cooking

  • Heat vegetable oil in a large wok or frying pan over medium-high heat until hot.
  • Add the sliced chicken in a single layer and cook for 3-4 minutes, flipping halfway until golden brown. Remove and set aside.
  • In the same pan, add garlic, ginger, and crushed Szechuan peppercorns. Stir-fry for 30 seconds.
  • Add sliced onion and bell peppers. Stir-fry for 2-3 minutes until slightly softened but still crunchy.
  • Return chicken to the pan, pour in the remaining soy sauce and chili oil. Stir everything for 2 more minutes, then taste and add salt as needed.

Serving

  • Remove from heat and serve hot, garnished with scallions. Enjoy over steamed rice or noodles.

Notes

Adjust the spice level by modifying the amount of Szechuan peppercorns and chili oil. Use fresh ingredients for best flavor and texture.
