  • 2 pounds chicken thighs, boneless and skinless
  • 3 tablespoons olive oil
  • 1 large onion, finely chopped
  • 4 cloves garlic, minced
  • 2 red bell peppers, chopped
  • 2 green bell peppers, chopped
  • 2 to 3 fresh red chillies, finely chopped (adjust to taste)
  • 1 tablespoon smoked paprika
  • 1 tablespoon sweet paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 tablespoon lemon juice
  • Fresh parsley, chopped for garnish

  • Begin by heating the olive oil in a large skillet over medium heat.
  • Add the chopped onion and garlic. Sauté for about 3-4 minutes until the onion becomes translucent.
  • Toss in the chicken thighs and cook until they are browned on all sides, approximately 5-7 minutes.
  • Once the chicken is browned, add the red and green bell peppers to the skillet. Cook for another 5 minutes, stirring occasionally.
  • Stir in the chopped red chillies, smoked paprika, sweet paprika, cumin, salt, and pepper. Ensure that the chicken and vegetables are well coated with the spices.
  • Reduce the heat to low and cover the skillet. Let it simmer for about 25-30 minutes until the chicken is fully cooked and tender.
  • Remove the skillet from the heat and drizzle with lemon juice.
  • Garnish with fresh parsley before serving.
