For the Marinade

  • 3 tablespoons peri peri sauce Use high-quality or homemade for best flavor.
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper

For the Chicken

  • 4 pieces chicken thighs, skin-on
  • 4 pieces chicken drumsticks
  • 1 lemon Fresh lemon juice Juice from one lemon.

Preparation

  • In a large bowl, combine the peri peri sauce, olive oil, smoked paprika, dried oregano, garlic powder, onion powder, salt, and pepper.
  • Add the chicken thighs and drumsticks to the marinade, ensuring all pieces are thoroughly coated. Cover the bowl and refrigerate for at least 2 hours, or overnight for best results.

Cooking

  • Preheat your grill or oven to medium-high heat, about 400°F (200°C).
  • Remove the chicken from the marinade and place it on the grill or a baking sheet, discarding any remaining marinade.
  • Grill the chicken for about 30-35 minutes or until the internal temperature reaches 165°F (75°C), turning occasionally for even cooking.
  • If using an oven, roast for about 40-45 minutes, basting with juices halfway through.
  • Once cooked, remove from heat and squeeze fresh lemon juice over the chicken.
  • Let the chicken rest for about 5 minutes before garnishing with fresh parsley and serving.
