Ingredients
  

Chicken Ingredients

  • 1 lb chicken breast or thighs, cut into bite-sized pieces
  • 3 tbsp maple syrup
  • 2 tbsp sriracha Adjust to taste
  • 1 tbsp soy sauce
  • 1 tbsp apple cider vinegar
  • ½ tsp garlic, minced
  • 1 tsp ginger, minced
  • Salt & pepper to taste
  • 1 tbsp olive oil For cooking

Coconut Rice Ingredients

  • 1 cup jasmine rice
  • ½ cup coconut milk
  • 1 cup water
  • Pinch of salt

Garnishes

  • Fresh cilantro, chopped
  • Lime wedges
  • Toasted coconut flakes
  • Sliced green onions

Instructions
 

Cook the Coconut Rice

  • Rinse the jasmine rice under cold water until the water runs clear.
  • In a saucepan, combine the rinsed rice, coconut milk, water, and a pinch of salt.
  • Bring everything to a boil over medium heat.
  • Reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes.
  • Remove the saucepan from heat and let it sit covered for an additional 5 minutes before fluffing with a fork.

Marinate the Chicken

  • In a medium bowl, whisk together the maple syrup, sriracha, soy sauce, apple cider vinegar, minced garlic, and ginger.
  • Season the chicken pieces with salt and pepper, then toss them in the marinade until well-coated.
  • Let the chicken marinate for about 10-15 minutes.

Cook the Chicken

  • Heat the olive oil in a skillet over medium heat.
  • Add the marinated chicken pieces to the skillet and cook for about 4-5 minutes per side, until golden brown and cooked through.
  • Pour in any remaining marinade and let it simmer for about 2 minutes.

Assemble the Bowl

  • Place a generous serving of the coconut rice in a bowl or plate.
  • Add the cooked chicken pieces on top.
  • Finish with garnishes of fresh cilantro, lime wedges, toasted coconut flakes, or sliced green onions.

Notes

For best results, marinate the chicken longer for deeper flavor, and adjust sriracha to taste for desired spiciness. Adding a teaspoon of lime juice to the rice is a nice touch.
