Ingredients
  

For the filling

  • 2 cups shredded cooked chicken
  • 1 cup hatch green chiles, roasted and chopped
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup sour cream
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • to taste Salt and pepper

For the assembly

  • 10-12 pieces small corn tortillas
  • Oil for frying (if frying)
  • Fresh cilantro for garnish (optional)
  • Lime wedges for serving

Instructions
 

Preparation

  • In a large bowl, combine the shredded chicken, chopped hatch chiles, shredded cheese, sour cream, garlic powder, onion powder, ground cumin, salt, and pepper. Mix until well combined.
  • Heat a skillet over medium heat. Lightly warm the corn tortillas in the skillet for about 30 seconds on each side to make them pliable.
  • Take a warm tortilla and add a generous spoonful of the chicken mixture to the center. Roll the tortilla tightly around the filling, folding in the sides to secure the contents.
  • Continue rolling until all tortillas are filled.

Cooking

  • If you choose to fry your taquito rolls, heat oil in a deep skillet or fryer to 350°F (175°C). Fry the taquitos in small batches, turning occasionally, until they are golden brown and crispy, about 3-4 minutes. Place the fried taquitos on paper towels to drain excess oil.
  • If you opt for baking, preheat your oven to 400°F (200°C). Place the taquitos seam-side down on a greased baking sheet. Lightly spray them with cooking oil to help them crisp up. Bake for 15-20 minutes or until they are golden brown and crispy.
  • Remove from heat and let them cool slightly before serving.
