  • 6 large eggs High-quality eggs for best results.
  • 2 tablespoons mayonnaise
  • 1 teaspoon chili garlic sauce Adjust to taste for spice level.
  • 1 teaspoon soy sauce
  • 1 teaspoon rice vinegar
  • Salt and pepper to taste

Garnish

  • Chopped green onions For garnish.
  • Paprika For garnish.

Preparation

  • Start by hard boiling the eggs. Place the eggs in a pot filled with cold water, ensuring they are fully submerged. Bring the water to a boil over medium-high heat.
  • Once the water reaches a rolling boil, cover the pot with a lid and remove it from heat. Let the eggs sit covered for about 12 minutes.
  • Transfer the eggs to a bowl filled with ice-cold water to stop the cooking process.
  • Once cool, gently tap each egg on a hard surface to crack the shell and peel under running water.

Filling

  • Slice each peeled egg in half lengthwise and remove the yolks to a mixing bowl.
  • Mash the yolks with a fork until crumbly. Add mayonnaise, chili garlic sauce, soy sauce, rice vinegar, salt, and pepper, mixing until smooth.

Assembly

  • Spoon or pipe the yolk mixture back into the egg whites.
  • Garnish with chopped green onions and paprika.

Notes

Best served cold but can also be enjoyed at room temperature. Can be made hours in advance and stored in an airtight container.
