Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground ginger
  • 1/2 teaspoon allspice
  • 1/4 teaspoon ground cloves

Wet Ingredients

  • 1 1/2 cups light brown sugar (packed)
  • 1/3 cup maple syrup
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup buttermilk

Add-ins

  • 1/2 cup chopped pecans
  • 1/2 cup raisins

Cream Cheese Frosting

  • 12 oz cream cheese (at room temperature)
  • 1/2 cup unsalted butter (at room temperature)
  • 3 1/2 cups powdered sugar
  • 1/2 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together the flour, baking powder, baking soda, salt, and spices until thoroughly mixed.
  • In another bowl, combine the brown sugar, maple syrup, vegetable oil, and applesauce, mixing well.
  • Add the eggs one at a time, mixing fully before adding the next.
  • Stir in the vanilla extract and buttermilk until evenly mixed.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Fold in the chopped pecans and raisins.
  • Pour the batter evenly into prepared pans.

Baking

  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cakes to cool in the pans for 10 minutes before transferring them to wire racks to cool completely.

Frosting

  • Beat the cream cheese and butter together until smooth.
  • Gradually add the powdered sugar and mix until fully incorporated.
  • Stir in the vanilla extract.
  • Once cakes are cooled, spread frosting between layers and over the top and sides.
