Spaghetti with Ramps

Ingredients
  

Main ingredients

  • 1 package 16 ounce package spaghetti
  • 1 tablespoon olive oil
  • 0.5 bunch ramps – leaves washed, dried, and finely chopped
  • to taste Salt
  • to taste Freshly ground black pepper
  • 1 tablespoon freshly grated Parmesan cheese or to taste

Instructions
 

Cooking Pasta

  • Bring a large pot of lightly salted water to a boil.
  • Once the water reaches a rolling boil, add the spaghetti and stir occasionally. Cook for about 12 minutes or until it is tender yet firm to the bite (al dente).

Sautéing Ramps

  • Heat one tablespoon of olive oil over low heat in a skillet.
  • Add finely chopped ramps and sauté gently for around 3 to 5 minutes until they have softened.

Combining Ingredients

  • Drain the spaghetti, reserving about 1/4 cup of the pasta water.
  • Add the cooked spaghetti to the skillet with the sautéed ramps. Pour in a bit of the reserved pasta water and toss everything together.
  • Season with salt and freshly ground black pepper to taste.
  • Sprinkle freshly grated Parmesan cheese over the top before serving.

Notes

Best served fresh. Feel free to add a drizzle of olive oil, fresh herbs for garnish, or a side salad to complement the dish.
