Main Ingredients

  • 1 small spaghetti squash (1-1/2 to 2 pounds) Choose one that feels heavy for its size.
  • 1/2 cup water Used to steam the squash.
  • 1 pound ground beef Use lean ground beef for a lighter option.
  • 1/2 cup chopped onion For flavor.
  • 1/2 cup chopped sweet red pepper Add sweetness and color.
  • 1 clove garlic, minced For additional flavor.
  • 1 cup canned diced tomatoes Drained.
  • 1/2 teaspoon dried oregano Adds Italian flavor.
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup shredded mozzarella or cheddar cheese Your choice of cheese for topping.
  • 1 tablespoon chopped fresh parsley For garnish.

Instructions
 

Prepare the Squash

  • Preheat your oven to 375°F (190°C). Slice the spaghetti squash in half lengthwise and scoop out the seeds. Place the cut side down in a baking dish and pour in 1/2 cup of water. Cover with aluminum foil and bake until tender, about 20-30 minutes.

Make the Filling

  • In a skillet over medium heat, add ground beef and cook until it begins to brown. Add the chopped onion, sweet red pepper, and minced garlic, cooking until the beef is fully browned and the vegetables are tender, about 5-7 minutes. Drain any excess fat.

Mix in the Goodness

  • Add canned diced tomatoes, dried oregano, salt, pepper, and the scooped-out spaghetti squash flesh. Stir for 1-2 minutes until combined and heated through.

Assemble the Casserole

  • Transfer the mixture into a greased 1-1/2-quart baking dish and spread it evenly.

Bake and Finish

  • Reduce oven temperature to 350°F (175°C). Bake uncovered for about 25 minutes. Remove from the oven, sprinkle with cheese and parsley, and let it stand for a few minutes before serving.

Notes

Serve family-style or in individual ramekins. Paired well with a garden salad or steamed vegetables. Garnish with additional parsley or red pepper flakes as desired.
