Instructions
Cook spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
In a large saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 1 minute.
Add ground beef and minced garlic, seasoning with salt and pepper. Cook until beef is browned and fully cooked.
Stir in sliced mushrooms, diced tomatoes with their juices, and pasta sauce. Bring to a gentle boil, then reduce heat to simmer for 15 minutes.
Remove from heat and mix in dried oregano, dried basil, and chopped parsley.
Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
Layer 1/3 of the beef mixture in the greased dish, followed by half of the spaghetti. Add half of the remaining beef mixture on top.
Repeat the layering process, finishing with the final 1/3 of the beef mixture on top.
Combine shredded mozzarella and parmesan cheeses in a small bowl and sprinkle over the top layer of the casserole.
Bake in the preheated oven for 18-20 minutes, until bubbly and the cheese is melted and golden.
Let the casserole rest for a few minutes before serving to allow flavors to settle.
