Spaghetti Casserole

Ingredients
  

  • 12-16 oz Spaghetti
  • 2 Tbsp Olive Oil
  • 1 small Yellow Onion Diced.
  • 1 lb Ground Beef
  • 3 cloves Garlic Minced.
  • 1 tsp Salt Or to taste.
  • 1/4 tsp Black Pepper Freshly ground, or to taste.
  • 8 oz Sliced Mushrooms
  • 28 oz Canned Diced Tomatoes With juices.
  • 24 oz Pasta/Tomato Sauce Your favorite jar.
  • 2 tsp Dried Oregano
  • 2 tsp Dried Basil
  • 2 tsp Chopped Fresh Parsley
  • 1 cup Shredded Mozzarella Cheese Part-skim.
  • 1 cup Shredded Parmesan Cheese

Instructions
 

  • Cook spaghetti in a large pot of salted boiling water according to package instructions until al dente. Drain and set aside.
  • In a large saucepan, heat olive oil over medium heat. Add diced onion and sauté until translucent, about 1 minute.
  • Add ground beef and minced garlic, seasoning with salt and pepper. Cook until beef is browned and fully cooked.
  • Stir in sliced mushrooms, diced tomatoes with their juices, and pasta sauce. Bring to a gentle boil, then reduce heat to simmer for 15 minutes.
  • Remove from heat and mix in dried oregano, dried basil, and chopped parsley.
  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch casserole dish.
  • Layer 1/3 of the beef mixture in the greased dish, followed by half of the spaghetti. Add half of the remaining beef mixture on top.
  • Repeat the layering process, finishing with the final 1/3 of the beef mixture on top.
  • Combine shredded mozzarella and parmesan cheeses in a small bowl and sprinkle over the top layer of the casserole.
  • Bake in the preheated oven for 18-20 minutes, until bubbly and the cheese is melted and golden.
  • Let the casserole rest for a few minutes before serving to allow flavors to settle.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven or microwave before serving.
