  • 1 lb ground beef Opt for lean ground beef.
  • 2 tbsp chili powder Adjust for spice preference.
  • 2 tsp garlic powder
  • 1/2 tsp sea salt
  • 2.5 cups sweet potato, diced (approx. 2 medium) Skin on for better texture.
  • 3/4 cup water
  • 1/2 cup onion, diced (1 medium)
  • 1 cup red bell pepper, diced
  • 3 cloves garlic, chopped
  • 6 ounces baby spinach
  • 1/4 cup cheddar cheese, shredded Eliminate for paleo version.
  • 1 cup fresh tomato, diced
  • 1 whole avocado, sliced

Instructions
 

Preparation

  • Brown the ground beef in a large skillet over medium-high heat until seared and golden-brown.
  • Add chili powder, garlic powder, and salt. Stir to coat beef in the spice mix. Cook for about 5 to 7 minutes until browned.
  • Remove the beef from the skillet and set aside, wiping out any residual fat.

Cooking

  • Add diced sweet potatoes and 1/2 cup of water to the skillet. Cover and cook for about 5 minutes until softened.
  • Add diced onion, bell pepper, and chopped garlic to the skillet. Pour in an extra 1/4 cup of water and stir. Cook for an additional 5-7 minutes until onions are translucent.
  • Return the ground beef to the skillet and stir to combine with vegetables and sweet potatoes.
  • Add baby spinach, cover, and cook for 2-3 minutes until wilted.
  • Top with shredded cheddar, diced tomatoes, and sliced avocado before serving.
