Ingredients
  

Salad Base

  • 6 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels, cooked or canned
  • 1 cup black beans, rinsed and drained
  • 1 cup shredded cheddar cheese
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1 jalapeño, seeded and diced (optional)

Dressing

  • 1/4 cup olive oil
  • 1 teaspoon chili powder
  • to taste Salt and pepper

Instructions
 

Preparation

  • Chop the romaine lettuce and place it in a large mixing bowl.
  • Add the halved cherry tomatoes, corn, black beans, diced bell pepper, avocado, red onion, cilantro, and jalapeño if you’re using it.

Dressing

  • In a small bowl, whisk together the lime juice, olive oil, chili powder, salt, and pepper. Adjust seasoning to your taste.

Assembly

  • Drizzle the dressing over the salad and toss well to ensure all ingredients are coated.
  • Finally, sprinkle cheddar cheese on top before serving. Enjoy immediately or refrigerate for a short time before serving.
