  • 2 cups cooked and shredded chicken You can use rotisserie chicken for convenience.
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa Choose a spicier salsa for more heat.
  • 1 teaspoon chili powder Adjust to taste.
  • 1 teaspoon cumin
  • 2 cups shredded cheese (cheddar or Mexican blend) For a spicier variation, try pepper jack cheese.
  • 1 cup sour cream Consider mixing with cream cheese for extra creaminess.
  • to taste Tortilla chips (optional for topping) These add a crunchy texture on top.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the cooked and shredded chicken, black beans, corn, salsa, chili powder, and cumin. Mix until well incorporated.

Layering

  • In a 9x13-inch baking dish, layer half of the chicken mixture at the bottom.
  • Spread half of the sour cream evenly over the chicken mixture.
  • Sprinkle half of the shredded cheese on top.
  • Repeat the layering with the remaining chicken mixture, sour cream, and cheese.

Baking

  • Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden.
  • Let the casserole sit for a few minutes before serving.

Notes
