  • 1 pound ground beef (ground chuck works too) Choose quality meat for best flavor.
  • 1 medium yellow onion (diced)
  • 1 package chili seasoning mix of your choice
  • 1 16-ounce can chili beans (any spice level)
  • 2 14.5-ounce cans diced chili-ready tomatoes with the juice
  • 1/2 cup water Add more if desired consistency is too thick.
  • 2/3 cup dry pasta (like spaghetti, broken into short pieces) Any pasta variety can be used.

Cooking

  • Heat a large pot over medium heat.
  • Add the ground beef and diced onion to the pot, cooking together until the beef is browned and no pink remains.
  • Drain excess grease using a spoon.
  • Add the chili seasoning mix to the pot, followed by the diced tomatoes, chili beans, and 1/2 cup of water. Stir to combine.
  • Bring the mixture to a gentle boil, then reduce heat and simmer for about 5 minutes.
  • Toss in the broken dry pasta, stirring gently. Continue to simmer for about 8 to 11 minutes or until the pasta is cooked through.
  • Turn off the heat and serve warm or let cool to room temperature.

Notes

Serve topped with sour cream, shredded cheese, or green onions. Can be paired with cornbread or salad for a complete meal. Tastes better the next day!
