  • 1 cup peanut butter (creamy or chunky)
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 cup sourdough starter (active) Ensure the starter is active and bubbly
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix together the peanut butter, brown sugar, and granulated sugar until well combined.
  • Add the active sourdough starter, baking soda, salt, vanilla extract, and egg to the mixture. Stir well to incorporate all the ingredients.
  • Gradually add the all-purpose flour, mixing until a dough forms.
  • Use a cookie scoop or tablespoon to drop the dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Flatten each dough ball slightly with the back of a fork, creating a crisscross pattern on top.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden. The centers may appear slightly soft, but they will firm up as they cool.
  • Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Serve on their own or pair with milk or coffee. For ice cream sandwiches, stack a scoop of ice cream between two cookies.
