  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 2 cups fresh peaches, peeled and diced Use ripe peaches for maximum flavor.
  • 1 cup rolled oats Add for texture.
  • Optional chopped nuts or chocolate chips For added texture.

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  • In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg. Set aside.
  • In a large mixing bowl, cream the softened butter, brown sugar, and granulated sugar together until light and fluffy.
  • Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
  • Gradually incorporate the dry ingredient mixture into the wet mixture. Stir until just combined; avoid overmixing.
  • Gently fold in the diced peaches and rolled oats. If using, add nuts or chocolate chips at this stage.

Baking

  • Drop rounded tablespoons of cookie dough onto your prepared baking sheet, spacing them about two inches apart.
  • Bake in the preheated oven for 12 to 15 minutes, or until the edges are golden and the centers are set but still soft.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
