Ingredients
  

For the cookies

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup white chocolate chips

For the glaze

  • 1 cup powdered sugar for glaze
  • 2 tablespoons fresh lemon juice for glaze

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and light in texture, about 2-3 minutes.
  • Add the eggs, lemon juice, and lemon zest, mixing until just combined.
  • In a separate bowl, whisk together flour, baking soda, and salt. Gradually add this to the wet mixture, stirring gently until just combined.
  • Fold in the white chocolate chips.
  • Using a tablespoon-sized scoop, drop balls of dough onto a lined baking sheet, spacing them about 2 inches apart.

Baking

  • Bake for 10-12 minutes until edges are lightly golden.
  • Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Glaze

  • Mix powdered sugar with fresh lemon juice until smooth.
  • Once cookies are cooled, drizzle the glaze over the top.
