Ingredients
  

  • 4 pieces Bone-in, skin-on chicken thighs or breasts
  • 2 tablespoons All-purpose flour
  • 1 cup Low-sodium chicken broth
  • 1/2 cup Heavy cream or whole milk
  • 1 piece Medium onion thinly sliced
  • 2 cloves Garlic cloves minced
  • 1/2 teaspoon Smoked paprika optional
  • to taste Salt
  • to taste Black pepper
  • 2 tablespoons Olive oil or butter

Instructions
 

  • Pat the chicken dry. Season generously with salt, pepper, and smoked paprika.
  • In a large skillet, heat olive oil or butter over medium-high heat. Add chicken skin-side down and sear until golden, about 5-6 minutes per side. Remove and set aside.
  • In the same pan, lower the heat and add the onions. Cook until soft and translucent, about 5 minutes. Stir in garlic and cook for 1 minute more.
  • Sprinkle flour over the onions and garlic. Stir for 1-2 minutes to cook out the raw flour taste.
  • Slowly pour in chicken broth while whisking to avoid lumps. Stir in cream and bring to a gentle simmer. Taste and adjust seasoning.
  • Return chicken to the pan, nestling it into the gravy. Spoon some of the sauce over the chicken. Cover and simmer on low heat for 25-30 minutes, or until chicken is cooked through and tender.

Notes

Feel free to customize with add-ins like mushrooms or fresh herbs. You can also spice it up with a dash of hot sauce or Cajun seasoning!
