S'mores Cookies

Soft, chewy cookies packed with chocolate chips and marshmallows, combining the classic flavors of s'mores into a delightful treat.

Ingredients
  

Dry Ingredients

  • 2 ½ cups all-purpose flour
  • 1 cup graham cracker crumbs
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ½ teaspoon cinnamon

Wet Ingredients

  • 2 sticks unsalted butter (softened)
  • 1 cup light brown sugar (packed)
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Mix-ins

  • 1 cup miniature chocolate chips
  • 1 ½ cups mini marshmallows
  • 2-3 bars milk chocolate candy bars (chopped)

Instructions
 

Preparation

  • Preheat your oven to 375°F and line your baking sheets with parchment paper.
  • In a medium bowl, whisk together the flour, graham cracker crumbs, baking soda, salt, and cinnamon.

Mixing the Dough

  • In a large mixing bowl, cream the softened butter with the brown sugar and granulated sugar until light and fluffy.
  • Add the eggs one at a time, mixing well after each addition. Then add the vanilla extract.
  • Gradually incorporate the dry mixture into the wet ingredients, being careful not to overmix.
  • Gently fold in the miniature chocolate chips and mini marshmallows.

Baking

  • Drop portions of the dough onto the prepared baking sheets, leaving space between each cookie.
  • Bake for 6-7 minutes, then press chopped milk chocolate and a few extra marshmallows on top of each cookie.
  • Return to the oven for an additional 3-4 minutes or until golden brown.
  • Allow to cool on the baking sheets for 5 minutes before transferring to wire racks.

Notes

These cookies can be served in a jar or on a platter. Pair with cold milk or recreate the s'mores experience by serving with extra marshmallows and chocolate.
