  • 1 whole whole chicken (about 4-5 pounds) Select high-quality chicken for best flavor.
  • 2 tablespoons olive oil For seasoning the chicken.
  • 1 tablespoon salt Season to taste.
  • 1 teaspoon black pepper Use fresh ground for better flavor.
  • 1 teaspoon garlic powder For added flavor.
  • 1 teaspoon onion powder Enhances the overall taste.
  • 1 teaspoon paprika Adds color and flavor.
  • 1 teaspoon dried thyme For aromatic flavor.
  • 1 whole lemon (halved) Adds moisture and citrus flavor.
  • to taste Fresh herbs (optional, for garnish) Chopped herbs like parsley or rosemary can brighten the dish.

Preparation

  • Start by rinsing your whole chicken under cold water, then pat it dry with paper towels.
  • In a small bowl, combine the olive oil, salt, black pepper, garlic powder, onion powder, paprika, and dried thyme. Rub this mixture all over the chicken, including inside the cavity.
  • Take the halved lemon and place it into the cavity of the chicken.

Cooking

  • Gently place the seasoned chicken breast-side up in the slow cooker and cover.
  • Set the slow cooker to cook on low for 6-7 hours or high for 4-5 hours.
  • After cooking, check that the chicken has reached an internal temperature of 165°F (75°C) at the thickest part.

Serving

  • Once cooked, let the chicken rest for 10-15 minutes before carving.
  • Carve the chicken and consider garnishing with fresh herbs and lemon wedges.

Notes
