Main Ingredients

  • 1 lb Italian sausage Use high-quality Italian sausage for the best flavor.
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth For a vegetarian version, use vegetable broth.
  • 4 large potatoes, diced
  • 2 cups kale or spinach, chopped Either leafy green can be used based on preference.
  • 1 cup heavy cream For a lighter option, consider using half-and-half.
  • Salt and pepper to taste
  • Red pepper flakes (optional) Add for a spicy kick if desired.

Preparation

  • Brown the Italian sausage in a large skillet over medium heat for about 5-7 minutes. Drain excess fat and transfer the sausage to the slow cooker.
  • Add the diced onion and minced garlic to the slow cooker along with the browned sausage.
  • Pour in the chicken broth, covering the sausage and vegetables. Add the diced potatoes and stir until well combined.

Cooking

  • Cover your slow cooker with its lid. Cook on low for 6-8 hours or on high for about 3-4 hours, until potatoes are tender.
  • 30 minutes prior to serving, add the chopped kale or spinach along with the heavy cream. Stir to mix everything thoroughly and season with salt, pepper, and red pepper flakes if desired.
  • Ladle the soup into bowls and serve hot.
