  • 1 lb Italian sausage Can substitute with turkey sausage for a lighter option.
  • 4 cups chicken broth Vegetable broth can be used for a vegetarian version.
  • 2 cups chopped fresh kale Can substitute with spinach or Swiss chard.
  • 2 large potatoes, diced Yukon gold or russet potatoes work well.
  • 1 medium onion, chopped Adds flavor and aroma to the soup.
  • 2 cloves garlic, minced Enhances flavor; can use more for stronger taste.
  • 1 cup heavy cream Stir in 30 minutes before serving for creaminess.
  • to taste Salt and pepper Adjust according to personal preference.

Preparation

  • Brown the Italian sausage in a skillet over medium heat, then drain excess fat and transfer to the slow cooker.
  • Add the chicken broth, chopped kale, diced potatoes, chopped onion, and minced garlic to the slow cooker.

Cooking

  • Set the slow cooker to low and let it cook for about 6 to 8 hours or high for about 3 to 4 hours.
  • 30 minutes before serving, stir in the heavy cream and season with salt and pepper.

Serving

  • Ladle the soup into warm bowls and garnish if desired. Serve with crusty bread or a side salad.

Notes

For a thicker soup, mash some of the potatoes before adding the cream. This soup tastes even better the next day and can be made ahead. Leftovers can be frozen for up to 3 months.
