  • 2 pounds chicken breast Use high-quality, organic or free-range if possible.
  • 1 can diced tomatoes (14.5 oz) This provides moisture and flavor.
  • 1 cup queso dip For creamy and cheesy goodness.
  • Tortillas For serving.

Instructions
 

Preparation

  • Place 2 pounds of chicken breast into the base of your slow cooker, distributing evenly.
  • Pour 1 can of diced tomatoes over the chicken and add 1 cup of queso dip on top.

Cooking

  • Cover the slow cooker with its lid and cook on low for 6-8 hours or on high for 3-4 hours.
  • Once cooked, shred the chicken with two forks in the slow cooker and mix with the sauce.

Serving

  • Warm tortillas in a pan or microwave.
  • Spoon the chicken mixture onto warm tortillas and add your choice of optional toppings.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 2 months. Customize with flavored queso or add beans for more protein.
