  • 1 tablespoon minced garlic
  • 1 tablespoon minced ginger
  • 1 tablespoon cornstarch

Vegetables

  • 1 piece bell pepper, chopped
  • 2 cups broccoli florets
  • 1 cup shredded carrots

Preparation

  • Place the chicken breasts at the bottom of your slow cooker.
  • In a separate bowl, whisk together honey, soy sauce, ketchup, minced garlic, minced ginger, and cornstarch until smooth.
  • Pour the mixture over the chicken, ensuring that each piece is well-coated.
  • Add the chopped bell pepper, broccoli florets, and shredded carrots to the slow cooker.
  • Season everything with a pinch of salt and pepper.
  • Cover the slow cooker with the lid and set it to cook on low for 6-7 hours or high for 3-4 hours.

Serving

  • Once cooking time is complete, check the chicken for doneness; it should be tender and easily shredded.
  • Serve the chicken and veggies over rice or noodles, drizzling additional sauce from the slow cooker on top.
