  • 3 pounds boneless, skinless chicken breasts Use high-quality chicken for best results.
  • 1 cup chopped onion
  • 2 tablespoons butter For sautéing the onions.
  • 1/4 cup all-purpose flour (or cornstarch for gluten-free) Substitute with cornstarch to make gluten-free.
  • 2 cups pineapple juice
  • 1/2 cup brown sugar Adjust for desired sweetness.
  • 3/4 cup ketchup
  • 1 tablespoon soy sauce Use gluten-free soy sauce if needed.
  • 4 cloves garlic, minced
  • 1 1/2 teaspoons Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon ground ginger

Preparation

  • In a large mixing bowl, whisk together the pineapple juice, brown sugar, ketchup, soy sauce, minced garlic, Worcestershire sauce, salt, pepper, onion powder, and ground ginger to create the sauce.
  • Melt the butter in a skillet over medium heat and sauté the chopped onions until browned, about five minutes.
  • Stir in the flour (or cornstarch) and cook for an additional minute to create a roux.
  • Pour the pineapple juice mixture into the skillet and bring to a boil, stirring frequently. Cook for 10-15 minutes until thickened.
  • Place the chicken in the slow cooker and pour the thickened sauce over it, ensuring all the chicken is well-coated.
  • Cover the slow cooker and set it to low heat, cooking for about 8 hours until the chicken is tender.
  • Shred the chicken in the slow cooker using two forks and stir it into the sauce before serving.

Notes

Serve over rice, in sandwich rolls, or on salads. Leftovers improve in flavor after a day in the fridge. Can be frozen for up to 3 months.
