  • 2 pounds beef (cut into bite-sized pieces) Use tender cuts like chuck roast.
  • 1 pound baby potatoes (halved) Other types like Yukon Gold can be used.
  • 1/2 cup unsalted butter Melted for the sauce.
  • 4 cloves garlic (minced) Fresh minced garlic is recommended.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon paprika
  • 1/4 cup fresh parsley (chopped, for garnish) Add just before serving.

Instructions
 

Preparation

  • Place the beef pieces and halved baby potatoes in the bottom of your slow cooker, ensuring they are laid out evenly.
  • Melt the unsalted butter in a saucepan over medium heat. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant.
  • Pour the garlic butter mixture over the beef and potatoes in the slow cooker.
  • Season with salt, black pepper, dried thyme, and paprika. Gently stir to combine.

Cooking

  • Cover and cook on high for 3-4 hours or on low for 6-8 hours until the beef is tender and the potatoes are fork-tender.
  • Once done, stir gently and garnish with freshly chopped parsley before serving.

Notes
