Instructions
 

Preparation

  • Place the chicken breasts in the base of the slow cooker.
  • In a bowl, mix the diced tomatoes, heavy cream, chopped basil, diced onion, minced garlic, Italian seasoning, salt, and pepper.
  • Pour the creamy mixture over the chicken breasts in the slow cooker, ensuring they are well covered.
  • Cover the slow cooker and set it to cook on low for 6-7 hours or on high for 3-4 hours.

Finishing

  • Once the cooking time is up, shred the chicken with two forks while mixing it in the creamy sauce.
  • Serve the chicken over cooked pasta, rice, or with crusty bread.

Notes

For thicker sauce, mix 1 tablespoon of cornstarch with cold water and stir it in last 30 minutes. You can also add vegetables like spinach or bell peppers for added nutrition and flavor.
