Ingredients
  

Base Ingredients

  • 2 cups yellow onion, diced
  • 3 cloves garlic, minced
  • 2 lbs boneless, skinless chicken breasts

Sauce Ingredients

  • ½ cup diced chipotle peppers in adobo sauce Adjust according to spice preference.
  • ½ cup red salsa (preferably fire-roasted) Fire-roasted salsa enhances flavor.
  • 2 tablespoons honey Adds sweetness to balance flavors.
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano
  • ½ teaspoon salt Adjust to taste.
  • ½ teaspoon black pepper Adjust to taste.
  • 1 juice of lime Fresh lime juice for brightness.

Instructions
 

Preparation

  • Prepare the slow cooker by placing the diced onions and minced garlic at the bottom.
  • Lay the chicken breasts on top of the onion and garlic mixture, spacing evenly.
  • In a separate bowl, combine diced chipotle peppers, red salsa, honey, smoked paprika, ground cumin, dried oregano, salt, black pepper, and lime juice. Whisk until blended.
  • Pour the sauce over the chicken, ensuring it is well coated.

Cooking

  • Cover and cook on high for 3 to 4 hours or on low for 5 to 6 hours, flipping chicken every 1 to 2 hours.
  • Check for doneness; chicken should be tender and shreddable.
  • Remove chicken, shred it, and return to the slow cooker. Stir to combine with the sauce.
  • Let it sit on warm for 10 to 15 minutes.

Notes

For a thicker sauce, reduce cooking liquid before shredding and thicken on the stove. Adjust spice levels to preference by modifying chipotle peppers.
