Ingredients
  

Main Ingredients

  • 2 lbs boneless, skinless chicken breasts Can use frozen chicken with adjusted cooking time.
  • 1 medium yellow onion, diced Fresh ingredients elevate flavor.
  • 16 oz jar salsa
  • 15 oz can black beans, rinsed and drained Can substitute with pinto or kidney beans.
  • 10 oz can diced tomatoes
  • 4 oz can diced green chiles
  • 2 cups low-sodium chicken broth
  • to taste spices (cumin, chili powder, garlic powder) Customize spice level to preference.
  • Variety of toppings (sour cream, olives, avocado, shredded cheese) Customize to individual tastes.

Instructions
 

Preparation

  • Place the boneless, skinless chicken breasts at the bottom of your slow cooker.
  • Sprinkle the diced yellow onion evenly over the chicken.
  • Pour the jar of salsa over the chicken and onions.
  • Add rinsed black beans, diced tomatoes, and green chiles to the mix.
  • Pour in chicken broth and any desired spices, then gently stir everything together.

Cooking

  • Cover the slow cooker with its lid and set it to cook on low for 4 hours.
  • After 4 hours, shred the chicken with two forks right in the slow cooker and stir it back into the mixture.
  • Add instant rice to the slow cooker, stir well, cover, and cook for another 45 minutes or until rice is tender.
  • Sprinkle your choice of shredded cheese on top, cover, and let it melt before serving.

Notes
