Instructions
 

Preparation

  • Prepare your slow cooker by placing the chicken breasts at the bottom.
  • Add the black beans, corn, and diced tomatoes.
  • Sprinkle the taco seasoning over the top, ensuring everything is coated.
  • Pour the chicken broth over the ingredients and season with salt and pepper.

Cooking

  • Cover the slow cooker and set it to cook on low for 6-8 hours or high for 3-4 hours.
  • Once cooked, shred the chicken right in the pot using two forks and stir everything together.

Serving

  • Place a generous serving of cooked rice in a bowl.
  • Add a hearty portion of chicken and bean mixture over the rice.
  • Top with shredded cheese, sliced avocado, sour cream, and salsa as desired.
